Save the date for Saturday, November 10 at 7pm as Alma Cocina, located in the heart of downtown Atlanta in One Ninety One Peachtree Tower, is hosting its first in a series of special dinners that will reveal the secrets of a Mexican pantry. Executive Chef Chad Clevenger’s five-course dinner will feature a variety of different preparations of the unique Mexican delicacy, huitlacoche. Also known as the Mexican truffle or maize mushroom, huitlacoche is an edible fungus that grows on ears of corn. Its smoky, earthy and slightly sweet flavor is complimented by a velvety, smooth texture and is often used in tamales, sauces and stews. The huitlacoche will be provided by Burns Huitlacoche Farm in Groveland, Florida. The cost of the dinner is $40 per person (plus tax and gratuity) and seating is limited to 40 people. The first course is a Roasted Cauliflower & Red Pepper Salad featuring huitlacoche kernels, huitlacoche sauce, avocado, fried epazote, and huitlacoche paper. The second course is Huitlacoche Tamale with mushrooms, charred tomatoes, roasted garlic, pickled onions, and ranchero sauce. The third course is a Huitlacoche Masa “Fettuccine” roasted butternut squash, mushrooms, huitlacoche cream sauce, cotija, cilantro, and boiled Marcona almonds. The fourth course is a Confit Pork Cheeks consisting of arroz con crema, huitlacoche brown butter, and grilled sweet potato greens. That's not all - dessert is Sweet Corn Atole with huitlacoche cream, dried corn, and sweet potato churro.
