Tech Grad to Open Bakery on Westside

Świt Bakery and Cafe is set to open this winter on Marietta Street.

A little bit of Europe is coming to West Midtown.

A new early-morning spot, Świt Bakery and Cafe, is set to open this December in the Brickworks development on Marietta Street.

Ewelina Kieley, a 2008 graduate of Georgia Tech who grew up in Poland and now lives in Atlantic Station, is opening the European-style bakery next door to .

It's the 26-year-old's first business venture but she's not going it alone. She's solicited help from her future family members -- her fiancé Stephan Prockow, a graduate student at Tech, and his mother and sister. The couple plans to wed next year.

"It's been a growing experience," said Kieley, who moved to Atlanta from Poland when she was 11. She's lived in Atlantic Station for three years and studied biology at Tech.

"I really wasn't sure what I wanted to do with my degree," Kieley said. She said she wanted to start a business and a year ago her "ideas collided" with her future mother-in-law whose family has roots in Ukraine.

"We've grown up with these European foods, and we want to share that with the community," Kieley said. 

The bakery will serve breakfast and lunch from 7:30 a.m. to 5 p.m. when it opens this winter. It will occupy a more than 2,700-square-foot space with seating inside and out for about 100 people.

"Our main focus is artisan bread," Kieley said. She plans to serve gourmet sandwiches such as croque madame -- a hot ham sandwich with gruyère cheese, béchamel sauce and an over easy egg. 

Another menu item: whole wheat bread with salami, melted gouda, brine pickles, dill and an over easy egg.  

Kieley says she will serve pastries, cakes, coffee and favorite brunch cocktails such as bloody marys and mimosas. She's in the process of securing an alcohol license from the city and Tuesday night got support from neighborhood groups for her application.
