Introduction to Canning

This
two hour class provides an overview of the basics of hot water bath canning with
the goal of enabling the home cook to confidently start in his or her own
kitchen.  The course will help
dispel the myths and misinformation surrounding home canning and teach students
the safe way to preserve their favorite fruits and vegetables!  The class will include an initial discussion
about the basics of hot water bath canning – the scientific principles behind
the process, the equipment needed, and how to categorize and treat foods one
wishes to can.  Students will gain
hands-on experience in every step of the process:  discussion and tasting of the product to be put
up, equipment familiarization, food preparation, product cooking, proper
storage and labelling and actual hot water bath canning of their fruit or
vegetable.  Students will leave class one
to two jars of their product along with the confidence and knowledge to hot
water can at home.
